Arequipa earns its nickname — La Ciudad Blanca, the White City — from the luminous sillar stone quarried from the surrounding volcanoes and used to build everything from its colonial mansions to the extraordinary Santa Catalina Monastery. Peru's second-largest city sits at 2,335 meters in a fertile valley ringed by three volcanoes: El Misti (5,822m), Chachani, and Pichu Pichu. The altitude is high enough to feel the thin air but low enough to avoid the worst effects that hit visitors to Cusco or Puno, making Arequipa an excellent acclimatization stop on the journey between Lima and the highlands. The UNESCO-listed Historic Centre is one of the finest colonial ensembles in South America, its carved sillar facades glowing almost pink in the afternoon sun. Beyond the city, Colca Canyon plunges 3,400 meters deep — twice the depth of the Grand Canyon — and provides one of the most reliable places on the continent to watch Andean condors riding thermal currents at eye level. Arequipa also has its own proud culinary identity, distinct from Lima's coastal cuisine: picanterías serve dishes like rocoto relleno (stuffed hot pepper), chupe de camarones (freshwater shrimp chowder), and adobo arequipeño, a slow-cooked pork stew eaten for breakfast.
